Traceability — tracking every ingredient one step back to the supplier and every product one step forward to the customer — is a legal requirement under retained Regulation (EC) 178/2002 (General Food Law). This log links incoming raw material lot numbers and supplier details to production batch numbers and outgoing dispatch records.
Maintaining a complete traceability log enables rapid withdrawals and recalls as required by the FSA, satisfies BRC and SALSA audit requirements, and is examined during EHO visits and trading standards investigations.
